Happy Sunday everyone! Today I’m sharing a different kind of Sunday Stack with you. I mean I do love me some pancakes but I also love a loaded (chickpea salad) sandwich! Who’s with me?
Toasted sourdough bread, romaine lettuce, heirloom tomato, cucumber, arugula, pickles, mashed avocado….and a super tasty chickpea salad!
Recipe for this simple 5 minute salad below 👇🏼

2 cups of chickpeas, cooked and rinsed
1 small (red) onion
2 celery stalks
2 large pickle + 1 tbsp pickle juice
1 tbsp Dijon mustard
1/4 cup vegan mayo or mashed avocado
Salt and pepper to taste
Finely dice onion, celery and pickles. Put all ingredients into a food processor and pulse until salad reaches your desired consistency or simply mash chickpeas with a fork and mix in remaining ingredients.
Season with salt and pepper to taste and enjoy!
