Love the Recipe ? Dont Forget to Follow For Daily Amazing Content

I originally planned on making a salad with these ingredients but then I thought hey its Tuesday and I have fresh corn tortillas in the fridge so let’s turn this into summer tacos!
Everyone knows grilling corn is delicious but grilling fruit? Even better! Give it a try if you haven’t ☺️

Summer Tacos with Grilled Corn and Nectarines ☀️

6 corn tortillas
2 ears of corn (I used white corn)
1 large nectarine (or peach), ripe but firm
1 cup of cooked navy beans (or any other bean of choice)
2 handful of kale
1/2 of an avocado
Juice of 1 lime
Salt to taste

Vegan feta cheese (I used violife_foods )
Salsa verde
Fresh Lime

Heat up grill pan (or grill) and cook shucked corn from all sides until browned in spots.
This will take between 10 and 20 minutes depending on your pan or grill.
Cut nectarine in half, twist to take out the pit and cut into slices. Add those to the pan and grill for a few minutes each side until they have visible grill marks. Set aside.
(I used a small amount of avocado oil on my grill pan for this but that is optional)
Prepare kale salad in the meantime by chopping it finely with a knife, then massage it with the avocado, lime juice and salt until kale is nice and tender.
Crumble vegan feta if using and chop cilantro.
Let grilled corn cool down enough to handle, then cut corn kernels off the cob and cut nectarine slices into pieces.
Place corn tortillas on the hot grill pan for a couple minutes each side to crisp them up a bit. For a softer tortilla only leave them on for about a minute.
Fill tacos with kale salad, beans, corn, chopped grilled nectarines, feta and cilantro and enjoy 🌱
