Love the Recipe ? Dont Forget to Follow For Daily Amazing Content

Calls for one of my favorite healthy but more importantly cozy meals. The not quite traditional but still German inspired lentil soup. Lentil soup, any variety really, is definitely making a regular appearance in my house.

Hearty Lentil Soup

1 cup green or brown lentils, rinsed
4 medium potatoes *
3 carrots *
1 small zucchini
2 celery stalks
1 medium onion
2 (large) garlic cloves
4 cups water
A handful of fresh parsley
1 tbsp olive/ avocado oil or vegan butter
Season with:
1 tbsp ‘no chicken’ veggie base **
1 tbsp vegan friendly BBQ sauce
1 tbsp soy sauce or tamari
2 tbsp balsamic vinegar
Black pepper to taste
Optional:
A couple of bay leaves
Some fresh or dried marjoram

Finely dice onion, carrot, celery, mince garlic and cut potatoes into small pieces.
In a large pot heat up oil or butter and sauté onions first until fragrant, then add garlic, carrots and celery and sauté until lightly browned. Add potatoes, rinsed lentils, water and if using bay leaves and bring to a boil. Cover and cook for about 30 minutes or until lentils are soft. Don’t forget to stir occasionally and discard bay leaves at the end.
I always make this soup in my instant pot and sauté veggies first before cooking it on manual setting for 20 minutes.
Once lentils are soft, add all seasonings and herbs and adjust taste to your liking, i.e. more salt and pepper, vinegar etc.

Served here with some whole wheat couscous
*I used about a dozen red mini potatoes and a couple of regular ones, as well as rainbow carrots (1 orange, 1 yellow, 1 purple)
** I use betterthanbouillon but any veggie paste, powder or cube will work
